You can't write about cold brew shops and skip the one that started the nitro arms race. Stumptown's downtown flagship pours the original nitro cold brew from taps behind the bar, cascading like a stout, no ice, no straw — the pour that a thousand cafés (and a whole grocery aisle) copied.
The brew
The nitro is the order here. The nitrogen softens everything: velvet texture, chocolate-forward, a natural sweetness that reads like cream even though there isn't any. If I'm grading against the giants it spawned, it's still clearly better than the canned version you've had — fresher, rounder, less metallic on the finish. Against the very best glasses on this site, it's excellent rather than transcendent.
The space
Downtown flagship energy: high ceilings, a long bar, tourists photographing the pour and regulars ignoring them. It moves fast. This is not the place for a slow afternoon; it's the place for the pilgrimage pour.
The story
Nitro cold brew arguably went mainstream from this company, and drinking it at the source is the cold brew equivalent of seeing the band that invented the genre — maybe not the loudest show anymore, but you owe them the ticket.
Verdict: a history lesson that holds up. Order the nitro, stand at the bar, pay your respects.
