After the SANU detour ended without a drop of cold brew, Falò put the trip back on course — emphatically. A few streets over in Kamiichinomachi, on the edge of the preserved old town, this small light-wood-and-white-walls roastery pours the glass that instantly became the one to beat.

The brew

Poured black, no theatrics, and it doesn't need any. The first thing you notice is what's missing: acidity. There's essentially none — no sour edge, no bite on the finish, just a long, clean glide. Super smooth undersells it; this is the smoothest cold brew I have scored anywhere.

Then the flavor opens up: honey first, a soft floral sweetness with no sugar added, then chocolate underneath — more milk than dark, round and comforting. The cup stays balanced from the first cold sip to the last, slightly warmer one.

A perfect score isn't a mood. It's a glass with nothing to fix.

The space

Falò brings an unexpected pocket of Scandinavia to the Japanese Alps — pale wood, white walls, a handful of seats, and staff who talk beans with you in easy English. It sits a few minutes' walk from the Sanmachi historic streets, which makes it a natural mid-wander stop.

Verdict: 10/10 — the first perfect score on this site. If you're doing the Takayama old town walk, this is not optional.
