Cafe X is the robot coffee bar you walk past at SFO on the way to your gate: a glass box, a single white arm, tablets on the front, no barista. It's easy to dismiss as a gimmick. The tell that it isn't is the bean: Cafe X pours Onyx Coffee Lab, the Arkansas roaster that's one of my favorite cold brew sources anywhere, and one I never expected to find between a Hudson News and a gate change.

The brew

The OG Banana is Onyx cold brew with Cafe X's house-made banana syrup, and the combination works better than it has any right to. The Onyx base is what carries it — clean, chocolatey, smooth, with the roaster's signature sweetness that doesn't need help. The banana rides on top: real fruit, not candy, not the artificial "banana" flavor you'd fear.

It's a little sweet for me. Ordered black, an Onyx cold brew wants nothing added, and the syrup pushes the cup toward dessert. But I docked it one point, not three, because there are very few places doing this at all — a fruit-infused cold brew on a top-tier base, made consistently, at an airport. The novelty is earned, not gratuitous.

The space

There is no space. It's a kiosk in a terminal: you order on a tablet or by QR code, watch the arm do its thing behind glass, and collect the cup from a cubby. Perfectly clean, weirdly satisfying to watch, open around the clock. Rated for what it is — a machine — and the machine hits its marks every time, which is more than most airport counters manage.

The story

Cafe X started as a San Francisco robot-café startup, shut its city storefronts, and bet everything on airports. The bet that matters for this site is the coffee one: instead of a commodity bean hiding behind the robot, they went and sourced Onyx and started infusing syrups in-house. A robot pouring one of the best cold brews in America is the kind of thing this site exists to notice.

Verdict: 9/10 — the best cold brew I've had inside an airport, and the only banana cold brew on this map. Ask for the plain Onyx cold brew if you take it black; get the OG Banana if you want to see how far the format can go.
