Bird Rock is the elder statesman of San Diego specialty coffee, and the cold brew tastes like it was made by people who have opinions about farms. Brewed from their direct-trade single origins, it's the opposite of the dark syrupy style — this is cold brew as a clarity exercise.
The brew
Clean is the word. Bright citrus up top, a milk-chocolate middle, and a finish that disappears politely instead of squatting on your tongue. It's lighter-bodied than the Pacific Northwest style — a beach-town cold brew, engineered for drinking outside in the sun, which conveniently is the only weather this neighborhood has.
The space
Surf-town casual with roaster-nerd bones: bags of competition-grade beans by the register, a patio crowd in various stages of wetsuit, and baristas who will happily tell you which farm your glass came from if you make eye contact.
The story
The roaster that put San Diego on the specialty map, still buying at the quality end and still treating cold brew as a showcase for the beans rather than a caffeine delivery system.
